Knife Care
For those who don’t want to read a lot in short if you have a high carbon knife all you need to do is after you wash it dry it off with a towel and add light layer of food safe oil. Not dishwasher safe.
Knife care is essential for the life of a knife. Most people don’t know the proper way to take care of a carbon steel knife. Most people don’t even know they exist. I sure didn’t when I first started on my knife making adventure.
In short, its a knife that is prone to corrosion but holds an edge better than your run of the mill store bought stainless knives.
What is a high carbon knife? A carbon knife is a knife that holds a great edge but is also prone to corrosion. Its a give and take thing. If your anything like me all your life you probably never had a good knife that was consistently sharp and held an edge when you did sharpen it. Once I learned about quality knives it was life changing for me. It comes with a little work but its well worth the effort.
How do I take care of a High Carbon Knife? Essentially all you have to do is wipe it down after a you use it. Wipe it dry will a towel or paper towel after you use wash it and give it a coat of food safe oil to help protect it from the environment. NOT DISHWASHER SAFE. KEEP AWAY FROM DISHWASHER AT ALL COST.
Over time and extended use the knife’s edge will roll over. When that happens you can straighten the edge back with a ceramic honing rod or a leather strop. The knife will cut like new. This is the first option before sharpening. All knifes come with lifetime sharpening. If the edge gets dull and you don’t feel comfortable sharpening yourself feel free to send it to us for a free sharpening you just have to cover the shipping cost.
What is a Patina? Since high carbon knives are not stainless that will over time build up a patina. Do not fear the patina, it is your friend. A patina is adds an extra layer of protection to the knife from corrosion. Personally I think the patina adds an extra level of character to a knife and shows how much it is used.
Cutting Board Care
How to care for a cutting board? Our cutting boards are made from premium wood. As with all wood cutting boards regular maintenance is a must. NOT DISH WASHER SAFE. Cutting boards must be hand washed and pat dry. After a few uses it is recommended to apply a coat of food grade butcher block oil or butcher block conditioner.
